It is a dry grain of good size flat circular yellowish-creamy color. Rich in proteins, starches and sugars. It occurs in the sacred valley of the Incas in Urubamba, Cusco – Peru. Once harvested it is disinfected and then go through a process of washing and scrubbing with a special mechanism thereby removing the shell, to finally be dried, sorted, graded and packed for export.
